"Use Your Veggies" Buddha Bowl with Rosemary Harissa Nut Fusion

Need something to do with all those veggies you roasted up with dinner? Try this nutritious buddha bowl made with leftover veggies, beans, grains and our Rosemary Harissa Nut Fusion.

ingredients

Tahini Sauce

  • ½ C. Greek Yogurt
  • 3 Tbsp. Tahini
  • 1 Tbsp. Fresh Lemon Juice
  • 1 Garlic Clove
  • Salt and Pepper, to taste


Buddha Bowl

  • 1 C. Quinoa, Brown Rice or Ancient Grains, cooked
  • 1 C. Leftover Vegetables, roasted or sautéed
  • ¼ C. Chickpeas
  • ¼ C. Black Beans
  • Made In Nature Rosemary Harissa Nut Fusion
  • Fresh Pea Shoots, for garnish


Suggested Summer Vegetables

  • Brussels Sprouts
  • Cherry Tomatoes
  • Wild Mushrooms

DIRECTIONS

  1. Except for the garnishes, combine all of the sauce ingredients in a blender. Scraping down the sides, blend until smooth.
  2. Spoon the cooked grains into the bottom of low, wide bowl.
  3. Arrange the leftover veggies and beans on top of the rice.
  4. Garnish the bowl with the pea shoots and Nut Fusion.
  5. Serve with tahini sauce on the side or spooned over the bowl.
  6. Refrigerate the remaining sauce for another use.
