Sweet Potato Rounds

ingredients

  • 2 Sweet Potatoes, peeled and sliced into 1/2 inch rounds
  • 2 Tbsp. Olive Oil
  • 1 tsp. Cinnamon
  • 4 oz. Goat Cheese
  • ¼ C. Greek Yogurt
  • 1 Tbsp. Honey, plus more or drizzling
  • ½ C. Made in Nature Pomegranate Ginger Nut Fusion

DIRECTIONS

  1. Pre-heat oven to 375 degrees and prepare a baking sheet with parchment paper
  2. Arrange sliced squash on parchment paper. Brush both sides with olive oil
  3. Roast the sliced sweet potato for about 20 minutes, turning midway through. Sprinkle with cinnamon and allow to cool
  4. In a small bowl, whisk together the goat cheese, Greek yogurt and honey
  5. Add a small amount of the goat cheese spread to the top of each sweet potato rounds
  6. Sprinkle the rounds with Nut Fusions and drizzle with honey to serve
