Collard Wraps with Brown Rice and Dried Cranberries

Snack on these wraps, which are loaded with veggies and sweetened with Made In Nature Dried Cranberries.

Prep time: 10 minutes
Yields: 8 wraps

ingredients

  • 8 Collard Greens
  • 2 C. Brown Rice, cooked
  • 1 C. Matchstick Carrots
  • 1 C. Purple Cabbage, sliced
  • 1 C. Microgreens
  • 1 Avocados, sliced
  • ½ C. Spicy Hummus
  • ¼ C. Made in Nature Dried Cranberries
  • 2 Tbsp. Pumpkin Seeds
  • 1 Tbsp. Chia Seeds

DIRECTIONS

  1. Lay each collard leaf flat, rib side up. Using a chef’s knife, slice parallel to the surface to remove the protruding rib. Cut off the stems
  2. Working away from you toward the tip of the leaf, place the filling ingredients next to each other
  3. Start with the hummus and brown rice, then add the others as desired.To begin the roll, cross the open ends of the collard leaf over the fillings and fold in the sides as you roll the leaf away from you. Secure the ends with toothpicks if needed
