Chicken, Broccoli, and Kale Salad

For a quick, healthy weekday dinner pick up a rotisserie chicken on your way home and make this salad.

Prep time: 10 minutes
Yields: 4-6


Dijon Vinaigrette

  • 2 Tbsp. Champagne Vinegar
  • 1 tsp. Dijon Mustard
  • 3 Tbsp. Olive Oil
  • Salt
  • Pepper


  • 3 C. Diced or Shredded Rotisserie Chicken
  • 5 Strips Crispy Bacon, crumbled
  • 1 Apple, julienned
  • 4 C. Chopped Kale (6-8 leaves of green kale)
  • 2 C. Broccoli Florets
  • ½ C. Chopped Walnuts
  • ¼ C. Made In Nature Raisins
  • Purple Cabbage Leaves, for serving


  1. In a small bowl, whisk together the ingredients for the vinaigrette. Set aside.
  2. In a larger bowl, combine the salad ingredients.
  3. Toss the salad with the dressing.
  4. Serve the dressed salad on a small dish, inside a cabbage leaf.

Note: Broccoli may be incorporated raw. Alternatively, using a steamer pot, they may be lightly steamed.
