    Apricot Rice Pudding Pops


    Popsicles are a great dessert or snack when the weather is warm. Instead of buying some from the store, with excessive sugar and artificial coloring, make some sweet and simple ones at home. All you need is a few ingredients and some ice-pop molds and sticks. This recipe calls for Made In Natures Organic apricots, but any of our fruits (bananas, apples, cranberries) or a combination or your choosing will make for a tasty treat!

    • 1 cup of low-fat or skim milk
    • 3/4 cup plus 2 Tbsp. canned unsweetened coconut milk
    • 1/4 cup heavy cream
    • a squirt of lemon juice (add to taste)
    • 3 tablespoons short-grain rice
    • 1/4 cup 1/4" pieces of Made In Nature Organic Apricots
    • 1/4 cup sugar
    • 1/2 teaspoon of vanilla extract


    1. Combine milk, coconut milk, lemon juice, vanilla extract and 1/2 cup of water in a medium saucepan. Bring to a boil; remove from heat, cover and let steep for 15 minutes.
    2. Meanwhile, place rice and 1/2 cup water in a small bowl; let stand for 10 minutes to soften then drain.
    3. Strain coconut-milk mixture through a fine-mesh sieve into a medium saucepan. Add the rice to the mixture and bring back to a boil. Reduce heat to low, cover and simmer (do not stir) until rice is very tender, roughly 30-35 minutes. Let cool.
    4. Next, Stir in apricots and sugar. Divide mixture among ice-pop molds. Freeze until beginning to set, 30-45 minutes. Insert a stick into each pop. Freeze until firm and then let sit in freezer for one hour longer. Keep in freezer until ready to serve.
