We <3 Cinco de Mayo! [Yes, around the office we’re humming this to this tune. Sorry, we can’t help ourselves.] May is spring flowers, sundresses (finally!), picnics in the park, Mother’s Day brunch, Memorial Day getaways and, of course, Cinco de Mayo. We know this holiday (which, remember is a commemoration of the Mexican army’s unlikely victory over the French in the Battle of Puebla) is technically celebrated on the 5th. But as this day has come to mean gathering with friends over a limey margarita, chips, guac and some good tunes, we really don’t think it’s possible to get too much of this good thing. That’s why we’re giving ourselves leeway to get festive all May long. Break out the streamers, stock up on limes, queue your playlist and join us. These vegan dishes from our test kitchens and culled from our favorite food bloggers make it easy to say sí!
