Fast Breakfast Recipes for a Healthy Start to Your Day

Rumor has it that breakfast is the most important meal of the day, and I’m not one to argue with established logic… especially if eating is involved. Make your first meal a healthy one by trying out one of these quick, healthy breakfasts.

Quick Healthy Breakfast IdeasOvernight Oats

Overnight oats are, hands down, one of my favorite quick and healthy breakfasts. And making them is so, so simple:

Ingredients:

  • ½ cup old fashioned oats
  • ½ cup almond milk
  • 1 tablespoon chia seeds
  • 2 teaspoons flax meal
  • 2 tablespoons natural peanut butter
  • ½ tablespoon honey
  • 1 teaspoon vanilla extract

Directions:

Mix everything together in a mason jar or other container with a lid, pop the jar in the fridge, refrigerate overnight, and enjoy! It’s that simple. Make sure to experiment with different ingredients, too. Protein powders mix in well, cashew butter is decadent, coconut milk tastes wonderful, berries are the perfect topping… well, you get the idea.

 

Tex Mex Style Migas

Migas are essentially scrambled eggs with a very tasty twist. Throwing them together is ridiculously easy and I usually wing it when making mine. Here’s the basic recipe I use:

Ingredients:

  • 1 corn tortilla (a handful of tortilla chips will work, too)
  • ½ cup pico de gallo salsa (but use more or less according to your preferences)
  • 2-4 whole eggs
  • Grated rBST-free cheese
  • Coconut oil (or your cooking oil of choice)
  • Avocado

Directions:

Whisk your eggs together in a bowl and set them aside. If you’re using corn tortillas, fry them until crispy over medium-high heat in your skillet. Reduce the heat to medium-low and add in the pico de gallo, eggs, and grated cheese. Cook, top with avocado for some healthy fats, and then enjoy!

Ingredient amounts aren’t incredibly important for this recipe and I usually adjust based on how hungry I am. For a more in-depth recipe, give these migas a try.

Peanut Butter Banana Potassium-Protein Smoothie

This shake is perfect if you need to eat breakfast on the go. Just blend the following ingredients below, and you’re good to go,

  • 1 cup Made In Nature Organic Dried Bananas
  • 1 cup ice
  • 2 tablespoons organic peanut or almond Butter
  • ½ cup oats
  • 1 ½ cups organic almond milk or coconut milk, or standard 1% or 2% milk

I also like to add a scoop of protein powder into my shakes — the Amazing Grass organic plant-based chocolate peanut butter protein powder is delicious in this recipe.
