Ingredients
  • 1-1/2 cups granulated sugar
  • 8 ounces (2 sticks) unsalted butter, room temperature
  • 2 eggs
  • 1/2 tablespoon coconut extract
  • 1 cup fine flaked coconut (we prefer unsweetened coconut)
  • 1/2 cup chopped Made In Nature Organic Dried Pineapple
  • 2-1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons of water if needed
Directions
  1. Preheat oven to 400 degrees F.
  2. Cream together butter and sugar.
  3. Add eggs one at a time until fluffy.
  4. Beat in coconut extract.
  5. Mix coconut and pineapple.
  6. Sift together flour, baking soda and salt.
  7. Stir this mixture into the cream mixture, form a ball, and wrap in plastic.
  8. Chill for two hours.
  9. Roll dough out, about 1/4 cup at a time, into a ball; scoop out each cookie by the rounded Tablespoon then flatten top of each cookie.
  10. Bake in oven for 7 minutes.
  11. Remove to a rack and cool completely.
