Banana Nut Fusion Muffins

This satisfying morning muffin includes our Banana Slices and Nut Fusion for amazing texture and a fruit forward taste.

Prep time: 10 minutes
Cook time: 30 minutes
Yields: 6 muffins

ingredients

  • 1/3 C. Palm Sugar
  • ½ C. Unsweetened Applesauce
  • ¼ C. Buttermilk
  • ¼ C. Coconut Oil
  • 3 Ripe Bananas, mashed
  • 2 Eggs
  • 2 tsp. Vanilla Extract
  • 2 C. Gluten-Free All-Purpose Flour
  • 1 tsp. Baking Soda
  • 1/2 tsp. Cinnamon
  • 1/2 tsp. Salt
  • 1/2 C. Pomegranate Ginger Nut Fusion, plus more for topping
  • 1/3 C. Made In Nature Banana Slices, plus more for topping

DIRECTIONS

  1. Preheat the oven to 350 degrees and prepare a large muffin tin with paper liners
  2. In a large mixing bowl, whisk together the palm sugar, applesauce, buttermilk, coconut oil, and bananas
  3. Whisk the eggs and vanilla into the wet mixture. In a separate mixing bowl, sift together the flour, soda, cinnamon and salt
  4. Incorporate the wet and dry ingredients
  5. Fold in the Nut Fusion and Banana Slices
  6. Pour the batter into the wells of the prepared muffin tin, almost to the top
  7. Top each well with additional Nut Fusion and Banana Slices
  8. Bake for 25-30 minutes until tops rise and turn golden
