Banana Date Pancakes

ingredients

  • 2 ½ C. All-Purpose Gluten-free Flour
  • 1 tsp. Baking Soda
  • 2 tsp. Baking Powder
  • ½ tsp. Salt
  • 2 C. Milk
  • 1 Banana, plus more sliced for garnish
  • 5 Made in Nature Deglet Noor Dates
  • 2 Eggs
  • 2 Tbsp. Olive Oil, plus more for cooking
  • 1 Tbsp. Vanilla Extract
  • Made in Nature Superberry Blast Fruit Fusion, for garnish
  • ½ C. Pecans, chopped for garnish
  • Maple Syrup, to serve

DIRECTIONS

  1. In a large mixing bowl, sift together and incorporate the flour, soda, baking powder and salt
  2. Combine all wet ingredients, plus banana and dates in a blender and puree until smooth
  3. Incorporate the wet and dry ingredients
  4. Heat about ½ tsp. olive oil in a non-stick skillet over medium heat
  5. Pour batter into the skillet to make about (12) 3” pancakes
  6. Cook until bubbling and browned on each side
  7. To serve, top with chopped pecans, sliced bananas, Superberry Blast Nut Fusion and Maple syrup, as desired
