Ingredients
  • 2 tablespoons extra-virgin olive oil, 2 turns of the pan
  • 2 pounds chicken tenders (or breasts cut in strips on an angle)
  • Salt and pepper
  • 1 large onion, chopped
  • 1/4 cup balsamic vinegar
  • 20 dried Made in Nature Organic Apricots, chopped
  • 1 cup chicken stock
  • 1 Cup of Made In Nature Organic Apricot Preserves (see recipe on the website)
  • 3 tablespoons chopped flat-leaf parsley, for garnish
Directions
  1. Heat a large skillet with a lid over medium high heat.
  2. Add oil and chicken.
  3. Season with salt and pepper.
  4. Lightly brown the chicken a few minutes on each side; add onions. Cook 5 minutes.
  5. Add vinegar to the pan and let it evaporate.
  6. Add apricots and stock.
  7. When stock comes to a bubble, add preserves and stir to combine.
  8. Cover pan, reduce heat and simmer 10 to 15 minutes.
  9. Serve chicken with a sprinkle of chopped parsley.
